Description

Ethiopia is also often called the cradle of coffee, where Arabica grew wild at the time - in the forests of the Kaffa region. The East African country is a worthy custodian of its old treasure, not only proud of the coffee grown there, but also drinking it with pleasure. Almost half of the amount produced is consumed within its borders, in Ethiopian households, Ethiopia is the world's largest consumer of coffee among producing countries. The country currently grows coffee based on small family businesses where the coffee receives proper care from the bush to the bags of raw coffee until placement. Thanks to this "primary producer" structure, only fully ripe and red cherries always reach the processing stations, thus guaranteeing homogeneous and uniform quality. This consistent quality is often ensured by manual sorting. Sidamo in Ethiopia is the third largest coffee region in the country after Yirgachefe and Harar. Located in southern Ethiopia, Sidamo is the perfect home for coffee bushes and the fertile mountains provide an ideal environment. The right environment and special care are definitely reflected in the cup: Ethiopian coffees are extremely complex, with floral and fruity peaks, while maintaining a balanced body and rich in exciting aftertastes. The best, spicy and aromatic coffees in Ethiopia are grown in the Yirgacheffe region. The coffee beans are characterized by citrus aromas and a sweet floral character. The drying method is partly responsible for the sweet taste, with the picked coffee being dried in the sun for 15-20 days in so-called "African driers". During the drying process, some of the sugars in the pulp are absorbed by the beans, which gives Yirgacheffe coffee its characteristic fruity, sweet aroma with bright acids and a balanced body.
