Einkorn is the wheat species cultivated by our ancestors for over 10,000 years, according to many specialists older than spelt and kamut.
Einkorn grains can be used for germination, or can be cooked, ground. The protein content is double in einkorn compared to normal wheat. It also contains higher amounts of nutrients than normal wheat or spelt. According to some studies, people with celiac disease can also consume it safely.
