Coffee appeared in Colombia in 1723, probably thanks to the Jesuits, whose harvest dates back to the 18th and 19th centuries. In the 20th century it became so dominant that in 1912 Colombia accounted for half of the world's total coffee exports. Today, it is the third largest producer of coffee in the world after Brazil and Vietnam. Colombia did not become one of the coffee countries by accident, its climate and terrain make it ideal for growing coffee. Located along the path of the Andes mountain range and home to the Nevado del Villa volcano, Villa County's mineral-rich growing areas and the area's microclimate contribute greatly to the cultivation of balanced and sweet, dynamically acidic coffees. How Can Coffee Be Caffeine-Free? Thanks to natural ethyl acetate from sugar cane, it is possible to decaffeinate coffee naturally. In the process, green coffee is steeped in hot water (to raise the moisture level) and then ethyl acetate from fermented sugar cane is added and this dissolves the caffeine in the coffee. The decaffeinated beans are then steamed to remove excess ethyl acetate and then dried to the appropriate moisture content.
