The process is a complex one - to reach this texture, truffle caviar is made from the juice of black winter truffles, which is obtained directly from the fresh truffle during its cooking. This tasty juice is then reduced into small pearls through a very sophisticated technique called "spherification". We get small pearls with the taste of truffle and the same color and texture of caviar! Chef's tip: Try it on toast or blinis to garnish fresh cheese, ham, foie gras, carpaccio and fish fillets, vegetable soups and crèmes, eggs, potatoes, fillets of meat and...all the other dishes that make a good home with forest truffles. Caviar from black forest truffles is used in many restaurants with Michelin stars in the world. Store in a dry, cool place away from light. After opening, it is recommended to keep it in the refrigerator and consume it within a maximum of 3 days.
