Obsthof Retter harvests the highest quality "green walnuts" annually, then they are stored in the cellar of Pöllau Castle for up to 15 years, or until the black walnuts have the perfect taste for processing, giving them the necessary time to ripen. When the black walnuts meet all the criteria, limited quantities are processed.
